Hello everyone, this week my husband brought home a huge sack full of green tomatoes, red tomatoes, onions, cucumber, and a few more vegetables. Since he brought them home I have been wondering what in the world I could do with them... With all this food I just aquired I was unsure what to do with it... so I did a little research to find any recipe I could that involved green tomatoes. After a few pages I decided to throw my worthless Ipad to the side and get creative. I remember my grandpa making salsa out of his red tomatoes and pepper, well since I was out of peppers I replaced it with green tomatoes. Recipe for Kelsey's Super Easy Homemade Salsa:
2 green tomatoes, chopped
2 red tomatoes, chopped
2 onions, finely chopped
1 can sweet corn, drained and washed. (wash the canned corn to remove excess sodium)
After you have all these chopped and drained, mix them all in a bowl. The next step is definatly up to your taste buds. I never measure anything when it comes to spices. Sorry, be a good guesser. However, I do reccommend you start with a little and add more if needed.
Spices:
-Salt
-Garlic Powder
-Pepper
-Parsley
-Tiny splash of splenda
**Once you have mixed everything together stick that senorita in the fridge and chill for an hour or longer. The longer it stays in the fridge the more flavor it will have**
