"Butt Bunny" Easter/Spring Cake

I find myself getting more and more creative everyday. Actually I can't take all the credit, Pinterest is my go to for all of this!

Anyways, I thought it would be extremely cute to make a "Butt Bunny Cake" to take as a dessert to my Mother's Sunday evening. So that's exactly what I did and I will give you my own personal step by step instructions on how I "healthified" it so that I could take a nibble :)  
OK so here it is....
First and foremost I decided not to make my own cake batter out of wheat flour, mainly because I have not perfected it and every time I try to make one it turns in to a dry tasting mess. So thank the good Lord, Pillsbury came out with a Sugar Free Vanilla and Chocolate cake batter mix!!! I think I hear angels, do you? Not to mention they also made a sugar free frosting... they must have been reading my mind:)


Next I began mixing the cake as directed on the box, however, this is where I did some more healthy modifications. Instead of using oil and eggs, I swapped the oil for 4oz light applesauce and I used 4 egg whites instead of 2 whole eggs! BRILLIANT, yes I know...
After I mixed that with a mixer I poured it into a greased glass Pyrex bowl... Since I did not have anything else that would make the cake look round, it worker perfect! (cook cake according to package, my cake cook for 55 minutes) The original recipe says to pour some batter into 3 cupcake pan cups, however, I sometimes don't pay attention and I did not do that, I instead found the JUMBO marshmallows at Wal-Mart and made my bunny tail and feet out of them. This will be up to you. Once my cake was through cooking I brought it out and let it cook completely for at least an hour. It is essential for you to let it cool so that the frosting does not melt when you start spreading it on.  The next step is to get a toothpick and stick one marshmallow on the top of your cake ( for your tail) then do the same for your feet. After I tooth picked my feet to my cake I cut another marshmallow in half and trimmed it so that it would be on top of my feet to make heels. Then I spread 1/3 of the icing all over my cake. Do not use all of the icing for this step. This step is just to secure the cake and hold the crumbs  together. Then place it in the freezer for 45 minutes so that the frosting will freeze. This will make the cake easier to manipulate once it come time for decorating.


***( These cake above are not my actual cake, I forgot to take pictures during the process, so all I have is the end result. These should help you visualize what yours should look like. My cake was plain vanilla and I did not add food coloring to the frosting because I wanted my bunny to be white!)***

While the cake was freezing I went ahead and made the coconut grass. I went ahead and bought 2 bags of coconut, but ended up only using 1. For the grass, I poured about 3 cups of coconut in a mixing bowl and added green food coloring until I found the consistency I wanted. Finally, it was time to decorate! I do not know why I do these projects because the whole cooking and freezing and preparing part is not me at all. I just want to DECORATE! :)

06.27.11: The BIG Day

They Big day for me and my friend was AMAZING! I really can't descride in words how beautiful the Mountains are in pictures, let alone when you are standing beneath them. It was absolutly breath taking :) Anyways I am not going to give you the step-by-step play of our whole trip experience becasue you would be here for days reading about it. However, I will give you a few details.... 1. Friday June 24 2011, drove to Dallas, TX to watch the Rangers play with my parents.

2. Sat. June 25, flew from Dallas to Salt Lake City, UT, spent the night there in an AMAZING HOTEL: The Grand American Hotel, please go here!

3. Sunday June 26, drove from Salt Lake through the Teton Mountains (scary, but beautiful) 4. Sunday around lunch we arrived in Jackson Hole, WY and checked in at Snake River Lodge and Spa :)







Ok, with that short and sweet summary I will get on with telling you how our wedding actually went. Sunday evening after we arrived in Jackson Hole and checked in we went to meet with Paul Hayden, a local preacher there in Jackson Hole who was going to marry us the following day. The meeting went wonderfully, we talked about our relationship, how the ceremony would go, and so forth. After that we went to Jacksol Square, which is a small "square" that is filled with shops and resturants. I loved that place, my friend, not so much! He hates shopping :) Then after a wonderful steak dinner we headed back to the lodge to get some much needed rest and prepare for the next day.

On your mark, get set, .... GO!

Wow,I have been contemplating on starting this blog for months now. Finally, I made time out of my busy schedule to start this thing and hopefully I will continue with this so-called "hobby" of mine! Anyways, since this is my very first post I figure it would be best to introduce myself a little more. I am 21 years old. I currently live in the town I was born and raised in and I could not be happier. I believe God has blessed me tremendously and for his graciousness I live my life through him.
In 2009, he led me to my best friend who I now call my husband. We dated for 2 years and in June 2012 we will celebrate our FIRST wedding anniversary. I am currently finishing up my degree in Early Childhood Education and could not be more excited to start giving homework instead of doing it!!! Ha, I am kidding, but on a serious note I am extremely excited to begin this new chapter of my life. So parents of the Texarkana area beware because come December 2012 I will be legal to corrupt your children :) We have two "not so human children", and beautiful I might add! Don't all mothers say that...well I know for a fact they are.  Besides that I am just making my way through life one day at a time. I will try to update our Family adventures weekly.
