I find myself getting more and more creative everyday. Actually I can't take all the credit, Pinterest is my go to for all of this!
Anyways, I thought it would be extremely cute to make a "Butt Bunny Cake" to take as a dessert to my Mother's Sunday evening. So that's exactly what I did and I will give you my own personal step by step instructions on how I "healthified" it so that I could take a nibble :)
OK so here it is....
First and foremost I decided not to make my own cake batter out of wheat flour, mainly because I have not perfected it and every time I try to make one it turns in to a dry tasting mess. So thank the good Lord, Pillsbury came out with a Sugar Free Vanilla and Chocolate cake batter mix!!! I think I hear angels, do you? Not to mention they also made a sugar free frosting... they must have been reading my mind:)
Next I began mixing the cake as directed on the box, however, this is where I did some more healthy modifications. Instead of using oil and eggs, I swapped the oil for 4oz light applesauce and I used 4 egg whites instead of 2 whole eggs! BRILLIANT, yes I know...
After I mixed that with a mixer I poured it into a greased glass Pyrex bowl... Since I did not have anything else that would make the cake look round, it worker perfect! (cook cake according to package, my cake cook for 55 minutes) The original recipe says to pour some batter into 3 cupcake pan cups, however, I sometimes don't pay attention and I did not do that, I instead found the JUMBO marshmallows at Wal-Mart and made my bunny tail and feet out of them. This will be up to you. Once my cake was through cooking I brought it out and let it cook completely for at least an hour. It is essential for you to let it cool so that the frosting does not melt when you start spreading it on. The next step is to get a toothpick and stick one marshmallow on the top of your cake ( for your tail) then do the same for your feet. After I tooth picked my feet to my cake I cut another marshmallow in half and trimmed it so that it would be on top of my feet to make heels. Then I spread 1/3 of the icing all over my cake. Do not use all of the icing for this step. This step is just to secure the cake and hold the crumbs together. Then place it in the freezer for 45 minutes so that the frosting will freeze. This will make the cake easier to manipulate once it come time for decorating.
***( These cake above are not my actual cake, I forgot to take pictures during the process, so all I have is the end result. These should help you visualize what yours should look like. My cake was plain vanilla and I did not add food coloring to the frosting because I wanted my bunny to be white!)***
While the cake was freezing I went ahead and made the coconut grass. I went ahead and bought 2 bags of coconut, but ended up only using 1. For the grass, I poured about 3 cups of coconut in a mixing bowl and added green food coloring until I found the consistency I wanted. Finally, it was time to decorate! I do not know why I do these projects because the whole cooking and freezing and preparing part is not me at all. I just want to DECORATE! :)
Now it was time, I retrieved my cake and began coating over the frozen frosting with the remaining frosting I had left over. I was more than enough because you don't want the icing to be extremely thick. Just thick enough so that your coconut will stick. Next is the coconut, this was the fun part, I got carried about with "Butt Bunny" and coconut-ed him right up. Then I added the grass and a few scoops of coco powder to make it look like dirt. It still didn't look right, then I remembered I forgot to add his little ears! Perfect:)
That is my little bunny! I thought it turned out wonderful, considering it was my first attempt. It was also a HUGE hit at my moms, the kids loved it and it tasted magnificent!
